Gluten Free, Dairy Free, Summer Salad

 

I have never been a big fan of salads.  I’ve mostly only eaten them because I know I should eat them.  A few years ago one of my super healthy friends made me a salad that was honestly one of the most delicious things I had ever eaten!  I was actually craving more,  which was crazy!  Me, craving salad?!  What I learned that day is that you can’t just throw some lettuce and veggies in a bowl and call it a salad…well at least not if you want to have an AMAZING salad!

There are 3 REALLY important staple ingredients to making a fabulous salad!

1- Homemade Dressing

2- Homemade Croutons

3- Roasted Nuts or Seeds

Aside from these 3 important staples, you can add any of your other favourite salad toppings and you will be enjoying a crave worthy salad!

Homemade Dressing (My friend’s amazing recipe)

1/4 Cup White Balsamic Vinegar

1/4 Cup Olive Oil

1TBSP Honey

2 Cloves Garlic (minced)

Dash of Salt

Pinch of Dried Oregano

Fresh, homemade croutons are essential and will absolutely make the difference in setting your salad apart! It sounds difficult and time-consuming, but it really is super easy!  I used gluten free, dairy free bread for this recipe, but you can use any type of bread.  

Homemade Croutons

Cut bread into squares (I used gluten-free, dairy free bread)

Melt 1 TBSP Earth Balance butter substitute (or regular butter)

1TSP Garlic Salt

1 TSP Onion Powder

Mix Earth Balance, garlic and onion powder together in a bowl.  Add in the bread cubes and toss them in the liquid until they are fully coated.  Place the coated bread cubes onto a cookie sheet and bake at 375F for 15 minutes (or until golden brown)

 

Roasted Nuts/ Seeds

Heat a pan over the stovetop on medium heat

Melt approx. 1 TBSP Earth Balance (or butter) in the pan.

Add nuts/seeds and roast until golden brown

Once you have made your salad, and added in your other favourite veggies (mine are cucumbers, mini tomatoes, avocado and red onion) you can add in your croutons and roasted nuts.   Lightly toss the salad in the dressing and enjoy!

Making salad this way has turned me into a salad lover!  It’s quick and easy, but helps to take your salad to another level!
