Clean Lemon Basil Chicken


Do you ever get in a dinner rut?  Every few months, I tire of the same 4-6 dinner dishes I have in rotation and start itching for something new!  I originally saw a lemon basil fish recipe that looked pretty tasty- except that I really dislike fish!  I know, I know….it’s terrible!  Trust me, I’ve tried MANY different fish recipes but I just don’t like it!  I WANT to like it because it’s so healthy for you, but I just can’t do it!

I decided to tinker with the original fish recipe and make it with chicken instead.  Chicken is my husband’s all time favourite dish so I’m always on the lookout for new chicken recipes!  Not only was this quick and super easy to make, but everyone in our house loved it!  I have a feeling I will be making this new dish more regularly!  🙂



1/4 Chopped fresh basil

4 Boneless skinless chicken breasts

2 Tomatoes sliced into 12 slices

2 Lemons Sliced (whole) into 12 slices

2 Cloves minced garlic

3 Tablespoons extra virgin olive oil

Pinch of sea salt and cracked pepper

4 Pieces of parchment paper (big enough to wrap up chicken breast)



Preheat oven to 375F.

Place one sheet of parchment paper on counter and place tomatoes slices in the middle of the paper.  Place one chicken breast on top of the tomatoes.  Drizzle with olive oil and sprinkle with garlic.  Cover with basil and add lemon.


Fold the parchment paper making a tight pouch. (Don’t mind my baking sheet. Clearly I need new ones! )


Let the pouch marinate in the  fridge for at least 4 hours (overnight is great too!)

Bake for 15 minutes until the pouches have puffed up. Your house will smell AWESOME while this is cooking!

Serve with your favourite veggies and voila- dinner is served!
