My friend Kristin came over for a visit this afternoon and I started to make a batch of stovetop popcorn as a snack for our boys. As if popcorn isn’t already a delicious enough snack, Kristin started telling me about a gourmet popcorn recipe she makes. It sounded so yummy that we made a batch of it for ourselves! And WOW! It did NOT disappoint! It is the perfect combination of sweet, salty and crunchy! It is almost too good! The best part about this recipe is that it is really simple to make and takes less than 10 minutes to whip up! This would be the perfect snack for friends who pop in last minute or for when you are needing to make something quick. Everything Kristin makes is delicious and this recipe is no exception! I know you are going to LOVE this!
Ingredients: 1 Cup popcorn kernels
1 1/2 Tsp cinnamon
2 TBSP butter (you can substitute with coconut oil if you are going dairy free)
2 TBSP honey
Directions: Cover the bottom of a pot with oil (olive or coconut) and pour the kernels in and cook on high. As soon as you hear the kernels popping, turn the heat down to low. As soon as the kernels stop popping remove the popcorn from heat. In a separate pan (a wok works best or a deep frying pan) combine butter (or oil), honey and cinnamon. Stir on medium heat until all ingredients are liquified together. Pour the popcorn into the liquid mixture and stir until all of the popcorn is evenly coated.
*If you like your popcorn extra crunchy you can put it on a cookie sheet and pop it in the oven for 15-20 minutes. It’s Friday night; why not get a little crazy and whip up a batch of this stuff?!
