Clean Creamy Chicken Marina


In my last post I shared a recipe using left over or pre-cooked chicken breast.  This is another recipe that uses left over chicken (of course if you don’t have any leftover chicken, you can cook up some to add to this recipe) My friend made this the other day and it was delicious!  This recipe is quick and easy and is soooo good! It’s also great for lunch the next day!  🙂 


2 Cooked chicken breast 

1 Can black olives

1/4 Cup goat feta cheese

6 Large diced tomatoes

1/4 Cup olive oil 

1/4 Cup water

1 TBSP fresh basil

1 Red onion

2 Diced garlic cloves 

Salt and pepper to taste 



Combine water, oil, onions, tomatoes and garlic in a saucepan and cook over medium heat stirring occasionally. Let mixture simmer on the stove top until the tomatoes have cooked down to a sauce.  (approx 30 mins) Add in the basil, feta cheese, olives and chicken. Cook and stir until the feta melts and makes the sauce creamy.  In a separate pot, cook desired servings of whole grain brown rice.  Plate the rice and add marina sauce over top and enjoy!
