Grilled Portobello Mushroom with Salsa


Last summer I went for lunch at my sister-in-law’s house and she served this.  It was so delicious I’ve been making it ever since!  This is the perfect addition to your summer BBQ menu as a vegetarian/vegan food. If you’re feeling creative you can switch up the salsa for mango salsa, strawberry salsa, or YOUR favourite salsa recipe.  These are even better the next day as leftovers!  Mmmm clean BBQ’ing never tasted so good!  Enjoy!



4 Portobello Mushrooms

2 Cans organic stewed tomatoes

1/2 Onion, finely chopped

1 Tsp minced garlic

1/2 Lime, juiced

1 Tsp salt

1/4 Cup canned sliced chiles

3 Tbsp fresh chopped cilantro


Place all ingredients except the mushrooms into a blender or food processor and blend until you reach your desired consistency.  Grill mushrooms on BBQ for 4 minutes on each side.  Place mushroom upside down on a plate and scoop salsa mixture into the centre of the mushroom.  Sprinkle with chopped cilantro and serve!  Happy BBQ’ing!  🙂
