These cute little snacks are a fun alternative to veggies and dip. They are delicious and super easy to make. You can change the flavour by adding different spices, olives, or feta cheese.
1 Can organic chick peas, drained and rinsed
1 Jar flame roasted red peppers
1-2 Garlic cloves
1/4 Tsp salt
1/4 Tsp pepper
2 Large cucumbers
Place all ingredients in a food processor and process until smooth. If it is too runny, just add more chick peas.
Fill a piping bag (or ziploc bag with the tip cut off) with the hummus mixture. Cut the cucumber an inch to 2 inches thick and hollow out the middle. Squeeze the hummus into the hollowed out cucumber and sprinkle with parsley or other decorative spices.
