Clean Pumpkin Bread

Now that it is officially Thanksgiving weekend I need to quickly squeeze in one last Pumpkin recipe!  This recipe taste great and is super healthy!  The final product is heavy enough to satisfy your hunger cravings!  You will enjoy this super healthy snack that is packed with flax and protein!  

 

Clean Pumpkin Bread

3 Eggs

1 cup honey

2 Tbsp ground flax 

1/2 Cup light oil

1 Cup un-sweetend applesauce or apple butter 

1 1/2 Cup pure pumpkin

1 1/2 Tbsp vanilla

2 Tbsp cinnamon

1Tsp nutmeg

2 Tsp pumpkin pie spice

1 Tsp salt

3 Cups flour (half whole wheat half spelt) (I used the gluten free flour from Costco)

1 Tsp baking soda

1 Tsp baking powder

2 Scoops vanilla protein powder 

Directions:

Mix all dry ingredients together in a separate bowl and wet ingredients in another.  Combine the wet and dry ingredients and mix well.  Bake at 350F for 45-60 minutes.
