Clean Pumpkin Muffins

Fall is my favourite season of the year!  There is something about the smell of the crisp fall air, snuggling in a warm sweater and enjoying all things pumpkin!  I love pumpkin!!  I love pumpkin drinks, pumpkin pies, pumpkin muffins,etc.  I came up with this recipe, and it’s turned out to be a family favourite! Believe it or not, these muffins are gluten free, sugar free, and dairy free.  When these were baking in the oven, my kitchen smelled amazing!  Now you can enjoy a pumpkin treat- guilt free! 


1 1/4 Cup rolled oats (blend in a blender or food processor to a powder- like oatmeal flour)

1 Cup rolled oats

2 TBSP flax powder (optional, but I like to add for a little heathly boost!)

1 Tsp baking soda

2 Tsp baking powder

1/2 Tsp salt

3/4 Cup apple butter

1 egg

3/4 Cup coconut milk

1/3 cup coconut oil

1Tsp vanilla 

1 Tsp nutmeg

2 Tsp cinnamon

1 1/2 Cup pumpkin puree

1/2 Cup high cocoa choc chips (optional)

1/2 Cup chopped walnuts (optional)

2 Tsp pumpkin pie spice

Combine all dry ingredients in a bowl and mix together.  Once mixed well, add in wet ingredients.  Line muffin tins with paper or grease and fill.  Bake at 350F for 15-20 minutes.  Enjoy!!
