As the fall weather approaches I start to crave comfort foods like warm pies and crumbles. This dessert is so delicious that no one will ever know it is sugar free, gluten free, and totally healthy! I know I’ll be bringing this to thanksgiving dinner so that I’m not tempted to dive into the pumpkin or apple pie!
Ingredients:
4 Cups peeled and sliced peaches (frozen work great!)
1 1/2 Cup raspberries (I use frozen for these too)
1 Lemon
3/4 Cup apple butter (You can find this in the organic section at zehrs or make your own)
2 Tbsp Butter
1/4 Cup shredded unsweetened coconut
1 Cup ground walnuts
1 Cup Oats
Cinnamon
Nutmeg
Directions:
In a large bowl mix together peaches and raspberries and squeeze the lemon juice on them. Add apple butter and mix until all fruit is coated with the apple butter. Pour 1 Tbsp of butter or the mixture and sprinkle with cinnamon and a pinch of nutmeg and place in a baking dish.
In a separate bowl mix together walnuts, oats and coconut and add 1 Tbsp of butter. Spread the nuts and oats mix over the fruit and bake in the oven for 1 hour at 350F.
Surprisingly easy and sooooooooo delicious!
