My friend Corrie gave me this recipe a few years ago and I think I honestly make this at least once a week! It is sooooo good! I like to add this to a bed of lettuce instead of using dressing, or even dipping celery sticks in it. Be careful! Once you make this, you may become addicted!
1 Ripe avocado
1 Small tomato
1/2 Small shallot (or red onion)
Pinch of salt
Dice tomato, onion, and avocado or blend lightly in food processor. Squeeze lime in mixture and add pinch of salt. Try not to eat it all in one sitting! 🙂
