Oven Roasted Cauliflower Recipe

I’ll confess; cauliflower has never been one of my favorite veggies to eat.  I liked it, but it was pretty low on my list of “favorites”.  After finding this recipe on pinterest, I now make this at least 2 times a week.  It is one of the easiest ways to make a veggie side dish and has an incredible taste!  I’ll often eat a bowl of this for lunch!  If you have leftovers, throw it in your favorite fall soup!  Yum, I’m getting hungry just thinking about it! 🙂

Ingredients:

1 Head of cauliflower

Olive oil

Sea salt and pepper

Preheat oven to 400 degrees F

Chop cauliflower into bite size pieces (the thinner the better)

Place cauliflower on a baking sheet and drizzle with the olive oil and salt and pepper

Bake for 45-50 minutes until brown and crispy

And that’s IT!!!  Delish!!!!!

  1. I love your blog! It’s so encouraging to know that a busy mom who’s no longer in her 20’s can do this! I gain a lot of motivation from reading about other people’s accomplishments. Thanks for your honesty. I just wanted to add that I love roasting cauliflower too but I add a mix of curry powder and balsamic vinegar to the olive oil first and they are delicious that way!

  2. I’ve been hearing a lot about using this same method with broccoli and I can’t wait to try it! My kids love the cauliflower so hopefully they’ll love the broccoli made this way too! Any way to get the kiddos to eat their veggies! Thank you so much for reading the blog! 🙂
